The Ingredients required to make Walnut Raisin and Banana Bread
- 3 ripe bananas
- 1/2 cup Raisins
- 1 & 1/2 tbsp Rum
- a half-cup of chopped, roasted walnuts
- a half-cup of unsalted butter
- 50 g of brown sugar
- 1/2 cup Granulated sugar
- 125 ml of milk (soya or plant milk)
- 60 g dairy-free margarine
- 2 cups of all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon of baking powder
- 1/tsp. salt
- 1 teaspoon cinnamon powder
- 1 teaspoon grounded ginger
- 0.5 teaspoon grated nutmeg

How to make Walnut & Raisin Banana Bread
Step 1
Mash up the ripe bananas
First of all, make sure the bananas that you are using for this recipe are very ripe, and by ripe means, they are spotted all over (not entirely black). Mashing ripe bananas make this process a lot easier. Mash the bananas in a bowl. Use a fork or a mashing tool to mash the bananas, then set them aside.

Preparing the remaining wet ingredients
Using a hand-held or electric mixer, combine the white sugar, brown sugar, and softened butter in a different bowl (to make this step faster). The dairy-free margarine should be incorporated until the mixture having a consistency of fine breadcrumbs is achieved.
Step 3
Mix all the mixtures now
Add this mixture to the mashed bananas.
Gradually add the plant milk. The amount of plant milk you will need depends depend on how ripe your bananas are; add a bit at a time until you reach a soft-dropping consistency.

Soak the raisins in rum
Soak the raisins in the rum for about 5 minutes in a small bowl.
You only need a small amount of rum to give the raisins that lovely, rich flavour.

Mix in the dry ingredients and bake
Sift together the flour, ground cinnamon, ginger, nutmeg, baking soda, baking powder, and salt with the banana and sugar mixture. Sifting these drier ingredients before mixing them into the banana bread batter, prevent clumps from becoming entangled.
Blend until smooth.
Step 6
Add in raisins and walnuts
Finally, add the chopped walnuts and soaked raisins (including the residual rum) to the banana bread batter.
Step 7

Pour the batter into a greased 4×8-inch loaf pan and smooth the top.
